Adult and Children Approved - Crispy Coconut Chicken Tenders

I LOVE Chicken! Having just regular chicken gets boring so I have been playing around with a few different recipes and putting my own twist on them to make them #kidapproved for my household of 5.

These were a huge hit! So much so that the kids had seconds!! I love when they are all over the good food :)

If you try this out let me know what you think and if your kids love it as much as mine. Stay tuned this week for the recipe for our slow cooker teriyaki chicken! It was AMAZING!!

Ingredients:
2 or 3 boneless skinless chicken breasts
1/4 cup coconut flour
2 eggs 
1 cup unsweetened coconut 
1/2 tsp garlic powder
1/2 tsp paprika
Pinch of pink Himalayan sea salt
Pinch of black pepper

Directions:
1. Preheat the oven to 400° F.
2. Slice chicken breast into about 1/2 inch by 2 inch pieces.
3. Use 3 bowls: 1. with coconut flour; 1 with 2 eggs beaten; 1 with coconut flakes, garlic powder, paprika, Himalayan sea salt, and black pepper (stir together with fork). 
4. Grab a baking sheet, line it with tinfoil and top with wire rack.
5. Dip both sides of each cut up piece of chicken into:
             --> 1st the bowl with coconut flour; 
             --> 2nd into the beaten eggs; and 
             --> 3rd into the coconut flake mixture. Place onto the wire rack.
6. Bake chicken for 10 minutes, flip tenders and bake another 10 minutes until cooked. For extra crispness broil chicken for 2-4 minutes
