Slow Cooker Chicken Cacciatore

Happy October All!!

October is probably my FAVORITE month of the year in Canada! I love the fall colours, the weather is not too hot and not too cold and of course it ends with Halloween! I know Halloween is not a holiday but I still love it :) I love seeing all the little ones dressed in their costumes and I of course love that as a Mom and adult I can dress up as well and have some fun with my babies!

With the cooling weather of fall I like to do some slow cooker meals. It is easy and makes the house smell amazing throughout the day!

One of my all time favorite slow cooker meals is Chicken Cacciatore:


Ingredients:

1/4 cup Italian dressing or whichever dressing you like, I have used balsamic vinaigrette or sundried tomato oregano
2 or 3 boneless skinless chicken breasts
1/2 lb. fresh mushrooms, sliced
1 large onion, coarsely chopped
1/2 cup each red and green pepper strips
1 clove garlic, minced
1 can crushed tomatoes
4 cups cooked rice (whichever kind you prefer)

Directions:

Heat dressing in pan on medium heat. Add chicken to pan and cook about 3 minutes on each side or until browned. Put mushrooms, onions, peppers, garlic and chicken into slow cooker. Empty can of crushed tomatoes over it all and cover with lid. Cook on High for 5 hours.


I use a fork and shred the chicken up in the slow cooker when it's almost finished. Serve chicken over rice. Amazing!
