Protein Chocolate Chip Cookies by #MyWrightHalf - Gluten Free

My husband was on a roll in the kitchen! He loves to create new things in the kitchen and this was no different!

He started his adventure making some blueberry apple sauce and moved on to making these delicious chocolate chip cookies.

Now as some of you know I am not a cook (I have actually burned water, true story). I used to love baking but that also meant I was eating it all too! I didn't really go as far as creating new things like Matthew does but I am usually pretty good at following a recipe.

I was a little scared to try these cookies out honestly but I have to say they were pretty good and a day later they were even better! We were talking about changing a couple things up with it for next time so stay tuned if you like these because there will be more to come!!

Ingredients:
1 1/2 c Quinoa Flour
1 1/2 c Pea Protein Powder
1 c Coconut Sugar
1 c Coconut Oil
1/2 tsp Pink Himalayan Sea Salt
1 tsp Baking Soda
2 tsp Warm Water
2 tsp Pure Vanilla Extract
3 or 4 Large Eggs
1 c Dark Chocolate Chips

Directions:
1. Soften coconut oil and then mix together with coconut sugar until smooth.
2. Mix water and baking soda together in separate container.
3. Add eggs, vanilla, and baking soda/water mixture together with coconut oil and coconut sugar.
4. Gradually mix in quinoa flour and pea protein powder.
5. Add in chocolate chips
6. Preheat oven to 350℉
7. Roll into balls (you could chill the dough in the fridge for a while to not be so sticky when balling), place on baking sheet and bake for 10 minutes. Let cool 10 minutes and enjoy :) We found they tasted even better the following day!
